Traditional Sopes

  • 1 kg corn flour dough
  • 4 mirasol chilies
  • 2 ancho chilies
  • 1 clove garlic
  • Oil
  • Salt to taste

Make small tortillas with the dough and cook on a hot plate, making a ridge at the edges so that food cannot spill out. Grind the chilies and garlic with salt to taste and add a little water or chicken stock once ingredients are mixed together and empty into a container.

Now that the sopes are cooked, dip them in the chili mixture until completely covered. Add filling, which could be refried beans, potatoes, chili poblano, cottage cheese, or your favorite stew. Fry sopes in oil until golden brown. Serve with lettuce and shredded cheese on top.
